Recipe for vegan and glutenfree Oat cookies
Here is a first attempt on a “small dry cookie” as they say down south. The recipe will surely be improved, I already feel that raisins or chocolate drops would be great to try. If you try it first, please let me know how you did.

The cookies turned out great, small dry cookies.
As usual I write my recipes with the instruction mixed with the ingredients, at the bottom there’s a grocery list to check what you need. I also write down different alternative ways I tried but rejected or just omitted in this recipe.
Time 40 minutes, work 10 minutes and 15 minutes baking time (times 2 plates) at 175 C in the owen
Let’s bake
Turn on the owen at 175 C, normal mode
Mix the ingredients bellow with a dough stirrer or by hand
200 grams room tempered margarine, if it’s cold you have to mix longer
1,5 dl sugar – I used coconut sugar
1,5 tbs baking powder
3,5 dl oats
1 dl potato starch
1,75 dl buckwheat flour
1 tbs vanilla sugar
I can already see I’m missing salt… next time
When your dough is without lumps of fat, you’re done
Make 30 balls and put them on two baking papers and flatten them with a fork as shown bellow.
Bake the plates one at a time in the owen for 15 minutes.
Let them cool down and eat with hot chocolate, or a beverage of your choice.
Alternative recipes
Next time I will add a couple of dl of raisins and a pinch of salt I’ll get back on how it works out, or try yourself.
